Thomas de Wangen and Lorna Cooper came back from Shanghai, where they imported and distributed wine, to plant themselves in the Balbaína pago: twenty-two hectares farmed organically and regeneratively on tosca cerrada albariza, with the bodega raised on the walls of the old Castillo de las Ánimas. Alongside Palomino they are bringing back near-lost varieties — Tintilla, Perruno, Vijiriega, Mantúo de Pilas, Jaén blanco — and with their parallel project Diatomists they bottle fortified wines by pago and by butt.

The bodega of the Guerra Monge family — the family of the Taberna der Guerrita — a few steps from the tavern itself. Three hundred square metres and some hundred and thirty butts, with seven hectares of its own in Mahína and Campix. For years it sold from the cask in the tavern, until in 2019 it was constituted as a bodega; its first commercial bottling was a 2023 vintage manzanilla.
