A wine shop and bodega on Calle Mar, in the original house where Pedro Romero began ageing manzanilla in 1840. Since 2014 it has bottled very small runs of manzanilla, amontillado, oloroso and palo cortado, and it still sells old wine from the cask to anyone who turns up with a bottle.

A family of vine growers since 1850. Miguel Guerra Virtués started out selling pine firewood from a warehouse on Calle de la Plaza, alternating it with the harvest, until in 1940 he bought the bodega on Calle Mendaro, built in 1880, which is still the house. That warehouse gave his fino its name: the palillos were the pine stakes used in the vineyard. It was the first house in Chiclana to bottle a fino, and Palillo has been bottled since 1943.
View wineryHalf a hectare of organic Cabernet Sauvignon and Syrah at the Los Llanos estate, which Jerónimo Ruiz Mota bought in 1999. Everything happens in the bodega itself, from harvest to bottling, and since 2014 it has been the home of the Asociación Portuense Amigos del Vino Tinto.
View wineryThe Jerez project of Peter Sisseck — the Dane behind Dominio de Pingus — and Carlos del Río. They bought a small bodega in the Santiago quarter and with it eight hectares of vines in Balbaína and two in Macharnudo, farmed strictly organically. The house is also known as Viña Corrales and is one of the nine members of Territorio Albariza.

An 1855 bodega at the foot of the Barrio Bajo escarpment, with Tarifa flagstones in its aisles and sand on the floor. It ages manzanilla in century-old American oak butts, racks it by jug and canoe and draws it by hand to bottle it en rama, straight from butt to bottle.
View wineryThe Calle Jardinillo bodega of the González Sillero family, almacenistas ever since José González Granados began storing butts in the Almocadén pago, which gave it its name. Since 2016 it has not appeared in the Consejo’s register, and today the premises, still open, host gatherings such as the Christmas zambombas.
View wineryThe Asencio brothers set this house up so that what was left of three extinguished Sanlúcar bodegas would not be lost: Pedro Romero, Gaspar Florido and Fernando Méndez. They keep their very old amontillados, olorosos and palos cortados — the Ánsar Real butts are over a century old — and since 2017 have released a manzanilla of their own, Velo Flor, backed by thirteen hectares in Balbaína and Miraflores.
