About the winery

The other branch of the Páez family. Antonio Páez Lobato started in 1945 by buying up batches of soured wine and ended up known as the king of vinegar; this house has spent more than sixty years ageing Vinagre de Jerez through criaderas and soleras, bottled under the Capirete label.

Designations of origin

DO Vinagre de Jerez (Sherry Vinegar)

View wineries →

A designation of its own for vinegar aged in the same American oak butts and through the same solera system as Sherry wine. Many wineries hold it alongside the wine DO; a few produce vinegar exclusively.
