Next door is the Salón de Cuerdas, with more than four hundred eighteenth- and nineteenth-century instruments gathered over forty years — one of the most important collections in Europe — and an ethnographic museum of over eleven hundred pieces from the Jerez countryside.

Diego Ruiz Aragón set it up in 1972 almost as a hobby, with the wines of two Chiclana bodegas that were closing down. His son Fernando gave it commercial push from 1988, and today the house lives on its moscatels — El Dorado, El Viejo Dorado and a gran reserva — on the fino La Parra and the cream El Abuelo Fernando. It sells over the counter and shows the bodega with a tasting of Chiclana produce.

Former stables at the Cruz Vieja, in the San Miguel quarter, where in 1972 Faustino González installed soleras from 1789 that came out of the Alcázar of Jerez. It supplied Lustau, Williams & Humbert and Wisdom & Warter as an almacenista until, in 2014, the heirs decided to release part of the wine under their own name, Cruz Vieja. It still ferments in butt, with its own yeasts.

The Lebrija bodega, founded in 1960 by Francisco González Palacios more as a hobby than a business. It works out of two buildings: Los Arcos, in the middle of town, and the newer Abuelo Curro, on the Overo estate. It makes fortified wines in the Lebrija style, and varietal reds and whites too.

Founded in 1914 in El Puerto de Santa María and now settled in Jerez, it is on both the wine and the vinegar registers. It ages fino, amontillado, oloroso, palo cortado and cream, and supplies musts and vinegars to other bodegas and to the food industry, which uses them for pickles, sauces and marinades.
