Sixteen hectares of albariza in the heart of the Carrascal pago, planted with seven varieties and a winery that steps off the fortified path: reds from Tintilla de Rota, Malbec and Syrah, and an oak-aged Chardonnay.
View wineryA country bodega between El Puerto and Jerez, on the albariza of Balbaína, making still wine, traditional-method sparkling from Marco grapes and a range of fortified wines now under way. It treats the vineyard with ozone and is converting to organic. The whole visit takes place among the vines.

The only winery in San Fernando, run by brothers José and Miguel Gómez, chemists by training. They farm five hectares split between Sanlúcar, Chiclana and Jerez on biodynamic lines, with spontaneous fermentations and barely any sulphur: Tintilla de Rota reds, Palomino whites and sparklings, and orange wines.

Thomas de Wangen and Lorna Cooper came back from Shanghai, where they imported and distributed wine, to plant themselves in the Balbaína pago: twenty-two hectares farmed organically and regeneratively on tosca cerrada albariza, with the bodega raised on the walls of the old Castillo de las Ánimas. Alongside Palomino they are bringing back near-lost varieties — Tintilla, Perruno, Vijiriega, Mantúo de Pilas, Jaén blanco — and with their parallel project Diatomists they bottle fortified wines by pago and by butt.
